They are sweeter than sugar and have a lower glycemic index. Agave nectar has the added benefit of a long shelf-life (approximately two years) without refrigeration or crystallizing. We use agave nectar in teas, coffee and lemonade to name a few. Many of our customers use agave nectar as a sugar substitute for all of their cooking needs. Use 2/3 cup of agave nectar in place of a cup of sugar. When using the agave nectar for baking you should also reduce you oil by half. Try it we think that you will truly enjoy the difference.
